1. How does this whole online shopping for farm fresh beef work?

These days, you can shop online for  anything! But maybe buying meat in such a way is a little new to you. Honestly, it’s not that complicated. You simply visit our B/F Beef Shop and click on the bundle or package you’d like to purchase. Your items will be stored in a shopping cart and you’ll be prompted to set up an account and process the order with a credit card or PayPal account. Rest assured your information is safe. Our site is registered and protected from malware through SiteLock for your security.

2. How often do you ship and when can I expect my order to arrive?

B/F Beef takes great pride and care when processing our online orders. All shipments are processed daily, and delivered according to the shipping option you select at checkout.  We’ll ship the product straight to your door. Since you will be receiving a frozen product, it is highly important that you plan to receive the shipment on a day when someone will be able to accept the shipment in person. 3. What do you mean by grass fed, grain finished?

At B/F Cattle Company, all of our Gelbvieh and Balancer® mother cows and herd bulls live in grassy pastures, with calves spending the first half of their lives eating grass and drinking their mother’s milk. All of our calves are born and raised on our farm. Some of the calves at weaning time will be supplemented to help them grow and mature and they will return to the herd to have calves of their own. Others will be selected to be finished on grain while continuing to have access to forages either by grass pasture or dried hay provided.  Finishing cattle on grain provides the internal fat (marbling) that gives beef its delicious juicy flavor, and selecting from the highest performing genetics guarantees efficiency and tenderness.

4. Are your cattle treated humanely? 

Before we answer to our customers, our veterinarian, the meat packer or anyone else, we answer to the Lord Jesus Christ concerning our stewardship of our livestock! We believe that the very fact that we get to raise our family on beautiful land caring for God’s creatures is both a privilege and a serious responsibility.  B/F cattle are handled with care, common sense and consideration for the unique instincts and needs of our animals.

5. Is B/F Beef safe and USDA Inspected?

Absolutely! All meat for public consumption in the U.S. is required by law to be inspected by the United States Department of Agriculture (USDA). While some states, including our home state of Missouri, allow for a state inspection, B/F Beef must be processed in a USDA facility in order to be sold across state lines. You can rest assured that America has the safest food supply in the world and B/F Farm Fresh Beef is completely safe. Our beef is processed at family owned lockers that are USDA certified meat packing facilities adhering to the strictest of standards. A federal USDA inspector is on site at all times.

You never need to worry that anything has been added to alter the quality of our beef. No Hormones are introduced to our cattle. No Antibiotics are administered. One of the things we pride ourselves in is the fact that our cattle are genetically selected for our environment so that they will be more resilient, efficient and naturally healthy. Remember, we feed this same beef to our own family, friends and neighbors. We wouldn’t sell you a product that we didn’t find completely safe and superior in quality.

6. How do you keep frozen beef frozen when shipping?

We carefully package our beef by using reusable insulated boxes, gel ice packs and blown dry ice. We alter the amount of dry ice used based on the season, weather conditions, and delivery destination.  All meat should arrive at least “cool to the touch” as if refrigerated, but hopefully still frozen! Thawed or partially thawed beef can be safely re-frozen if it still has ice crystals or is at 40 °F or below.

While the dry ice will have dissipated by arrival, we still want you to understand how to handle dry ice with care should the there be any remains.  In such instances, we recommend that you let it sit in the box in a well-ventilated area away from children and pets until it completely dissolves. If you need to touch the dry ice, use protective gloves so as not to harm your skin.

We will notify you once your order is in transit so that you can track your order, and place all perishable items in the refrigerator or freezer immediately upon delivery.

7. How Long will farm fresh beef keep in my freezer?

Farm fresh is just that…Fresh. And careful attention to packaging means your product arrives in optimal condition. No long hauls across the country to be transferred to a grocer’s storage and then rotated out to the super market meat case.  B/F Farm Fresh Beef is butchered locally, stored locally and shipped directly to YOU! As a result, you can expect your B/F Beef to keep safely frozen for approximately a year without losing any quality.

  8. What are the Safest Ways to Store and Prepare Beef? 

When it comes time to enjoy your B/F Cattle Company Beef, we recommend that you follow USDA directives for safe handling.

While thaw time for individual products will vary, you can expect small items like steaks or ground beef to genrally thaw while refrigerated within 24-48 hours. Larger items, such as roasts or a short loin may take 3-5 days to thaw completely, depending on their weight and density.

If you want it quicker, it is safe to thaw in the microwave only if you are going to immediately cook the raw product, but you will have uneven thaw and parts of the meat can dry out and diminish the taste and texture. We Do NOT recommend thawing in the microwave for that reason.

Never allow ground beef to thaw at room temperature.

Once items are thawed, cooking times likewise will vary according to the cut and the preferred method of cooking. Also, you will need to consider your choice for desired level of doneness. A kitchen themometer is a great tool to have at the ready to determine when a cut is cooked to your liking. For steaks, we recommend that you sear your steaks over maximum heat for 1-2 minutes per side, then reduce the heat to medium and grill to desired temperature according the chart below. Always remember to remove your steak just shy of ideal internal temperature and allow it to rest, loosely covered for 5-10 minutes before serving. This allows for the juices to redistribute evenly throughout the cut, delivering a tender, juicy taste with every bite.
